What Adhesive would you advise using for the PVC panels. Would you also overlap the joints of the panels. I purchased some today to use in a laundry area.

  For PVC panels any PVC Panel adhesive or construction glue will work, e.g. Henry 444 FRP or LePage No More Nails etc. You either overlap or butt join the panels, depends on a model, but no specials joint types there.
